Sugar-Free Keto Banana Pudding Recipe

This sugar-free keto banana pudding recipe is a delicious dessert that is sure to impress. Loaded with traditional flavors, this low carb banana pudding is cool and creamy like my easy peanut butter mousse, but has layers of homemade banana pudding, homemade keto whipped cream, and coconut flour shortbread cookies.
While traditional banana pudding recipes have more than 40 grams carbs, my sugar-free banana pudding has just 4.4 grams net carbs per serving. It’s a few extra steps compared to most of our keto dessert recipes, but it’s so worth it!
What Is Banana Pudding?
Contrary to the name, banana pudding isn’t just pudding that tastes like bananas. Traditional banana pudding includes layers of vanilla custard or pudding, sliced bananas, some kind of cake, cookies, or wafers, and whipped cream or meringue.
All of those components contain lots of sugar, so this sugar-free banana pudding is a refreshing alternative. The banana pudding layer is based on this keto chocolate pudding.
How To Make Keto Banana Pudding
These easy keto banana pudding comes together in a few steps:
Make whipped cream layer:
- Make sugar-free whipped cream like this. It takes just 2 minutes! Don’t forget to make 1.5 times the recipe, to have enough.
Make banana pudding layer:
- Bloom gelatin. Sprinkle gelatin powder over heavy cream and whisk together, then set aside to thicken.
- Make sugar-free banana pudding base. Heat heavy cream with Besti Powdered Monk Fruit Allulose Blend and sea salt, until smooth and bubbly around the edges. Stir in vanilla and banana extracts.
- Chill. Let the pudding base cool for a few minutes, then whisk to get rid of any film on top. Once it’s cooled enough not to melt plastic wrap, place that on top, flush against the surface, to prevent film from forming. Refrigerate to set.
- Make condensed milk. Make sugar-free condensed milk like this.
- Make keto friendly banana pudding custard. Use an electric mixer to beat cream cheese, condensed milk, and sugar-free banana pudding together, until smooth. Fold in 1/2 cup of the whipped cream.
Make cookie layer:
Follow the instructions here to make coconut shortbread cookies.
Assemble:
- Combine the layers. Start with a layer of shortbread cookies, then pudding mixture, and finally remaining whipped cream. Sprinkle more shortbread cookies on top, if desired.
TIP: If you are not super strict, you can garnish with banana slices as I did here. Skip these for keto, though.

Is banana pudding keto?
Regular banana pudding is definitely not keto friendly. It’s loaded with flour, sugar, and starchy bananas.
This keto friendly banana pudding recipe is the perfect substitute.
How many carbs in banana pudding?
Each serving of this low carb banana pudding has just 4.4 grams net carbs.
Most banana pudding recipes are loaded with sugar and some have more than 40 grams carbs per serving.
Can I use a different sweetener?
Yes, you can. You’ll want to use a powdered sweetener, so that your low carb banana pudding isn’t gritty.
We recommend powdered monk fruit with allulose, but plain powdered erythritol or powdered allulose will also work.
Why is my banana pudding runny?
Pudding can get runny if it is over-mixed, if the gelatin didn’t bloom adequately, or if you didn’t wait long enough for it to set.
While the pudding usually sets within 2 hours, do give it more time if that’s not sufficient. Let the pudding set overnight before adjusting anything.
After that, if your pudding is runny, you can try adding in a little more gelatin, but be sure to sprinkle it over the pudding and mix it in well. Then, you’ll have to chill again.

Whipped Cream Layer:
- 4 cups Keto Whipped Cream (make 1.5x the recipe)
Keto Banana Pudding Layer:
- 2 cups Heavy cream (divided into 1/4 cup and 1 3/4 cup)
- 1 1/2 tsp Unflavored gelatin powder
- 1/3 cup Besti Powdered Monk Fruit Allulose Blend
- 1/4 tsp Sea salt
- 2 tsp Vanilla extract
- 3/4 tsp Banana extract
- 8 oz Cream cheese (softened)
- 1 cup Keto Sugar-Free Sweetened Condensed Milk
Shortbread Cookie Layer:
- 1 recipe Coconut Flour Shortbread Cookies (make 1.5x the recipe if you want extras for topping)
Instructions

Make the Keto Whipped Cream according to the instructions here. Refrigerate until needed.
Keto Banana Pudding Layer:

In a small bowl, sprinkle gelatin powder (sprinkle, don't dump) over 1/4 cup heavy cream and whisk together immediately. Set aside.

In a medium saucepan, combine 1 3/4 cups heavy cream, Besti, and sea salt. Heat over medium-low heat for about 5 minutes, stirring occasionally, until smooth and bubbling around the edges.

Remove from heat. Stir in vanilla extract and banana extract.

Add the gelatin mixture to the saucepan, and whisk until smooth and dissolved. Set the pudding aside to cool for about 10 minutes. Whisk mixture again to get rid of film on top and cover with plastic wrap, pushing the plastic wrap to down onto the top of the pudding mixture to prevent a film from forming. Refrigerate for at least 2 hours, until firm.

Meanwhile, make the sugar-free condensed milk recipe according to the instructions here. Set aside to cool.

In a large bowl, add cream cheese and beat with a hand mixer and beat until smooth. Add sweetened condensed milk and beat until combined.

Remove pudding from refrigerator, add to bowl with cream cheese mixture and beat for 4-5 minutes, scraping the sides as needed.

Using a spatula, fold in 1/2 cup of the Keto Whipped Cream.
Shortbread Cookie Layer:
Assembly:

Line a 9x13 inch baking dish with one layer of coconut flour shortbread cookies.

Using a spatula, spread the pudding mixture on top. Add the remainder of the whipped cream over the pudding layer, and spread.

Cover and refrigerate for at least 4 hours, or overnight.

What changes would you recommend to make this with nut milks instead of cream?

Hi Stuart, We haven’t tried it, but you should be able to replace most of the heavy cream with coconut cream. Replace it 1:1 in all the components except the pudding layer, where you’d need a combination of coconut cream and almond milk – mostly with cream with enough milk to thin it out to a heavy cream consistency, and to add up to the amount in the recipe. Let us know how it goes if you try this!
