This low carb sugar-free lemon curd recipe uses just 4 ingredients and takes just 5 minutes to make. Make it ahead – it’s easily stored in the fridge.
Is Lemon Curd Keto?
Regular lemon curd is not keto (so much sugar – learn why sugar is bad here), but this easy low carb lemon curd is keto friendly! Each tablespoon serving has just 1/2 gram of net carbs.
How To Make Keto Lemon Curd
This keto friendly lemon curd takes just 5 minutes:
- Melt butter. Add butter to a saucepan and melt over low heat.
- Mix keto lemon filling ingredients. Remove from heat and add lemon juice, egg yolks, Besti monk fruit sweetener, lemon zest, and salt.
- Reduce. Return to low-medium heat and whisk continuously until the sugar-free lemon curd thickens.
TIP: If you want it even thicker, sprinkle some xanthan gum over it, then whisk.
Can I Make Sugar-Free Lemon Curd With A Different Sweetener?
Yes, there are a few other sweeteners that will work. For best results, use monk fruit allulose blend or plain allulose. These dissolve best, so that you get a smooth result.
If you want to use an erythritol-based sweetener, you can use powdered monk fruit erythritol blend or powdered erythritol. Notice that both are powdered, which helps them dissolve. Erythritol does not dissolve as well as allulose does.
Your keto lemon curd will be gritty if the sweetener does not dissolve, which is why allulose-based sweeteners are recommended for this recipe.
How Can I Use Low Carb Lemon Curd?
There are a number of ways to use sugar-free lemon curd:
- Fold it into keto whipped cream for a light and bright keto dessert.
- Serve over keto vanilla ice cream.
- Spread on your favorite keto toast.
- Dollop onto slices of keto cheesecake.
- Used as a filling for low carb vanilla cake.
- Put on ricotta cheese for an easy dessert.

Instructions

In a saucepan over low heat, melt the butter. Remove from heat.

Hi Maya! Appreciate the email today about Fruity keto recipes for spring and plan on making both the sorbet and lemon curd. May be a dumb question, but wondering if straining the seeds out (for diverticulosis) would change the macros from keto to low carb since I’d be removing fiber? Also, while I can figure out how to swap other berries, what would you suggest to make lemon or lime sorbet or sherbet. Thanks for all you do!!

Hi Terra, Straining out seeds would remove fiber, but it would also remove the component of total carbs contributed by the fiber, so the net carbs should stay about the same. We haven’t experimented with a lemon or lime sorbet yet.
