Low Carb Keto Lemon Meringue Pie Recipe
This keto lemon meringue pie recipe makes a light & bright sugar-free dessert, with 3g net carbs! Low carb lemon meringue pie has layers of almond crust, lemon filling, & keto meringue.
Ingredients
Almond Flour Crust
- 1 recipe Almond Flour Pie Crust
Lemon Filling:
- 1 cup Water
- 1 cup Besti Powdered Monk Fruit Allulose Blend
- 1 tbsp Lemon zest (zest from 1 lemon)
- 4 large Egg yolks
- 3 tbsp Butter
- 1/3 cup Lemon juice
- 1 tsp Xanthan gum
Meringue:
- 4 large Egg whites (room temperature)
- 1/4 tsp Cream of tartar
- 1/2 cup Besti Powdered Monk Fruit Allulose Blend
Instructions

Make low carb almond flour pie crust according to the instructions here. After making the crust, leave the oven on at 350 degrees F (176 degrees C).
Sugar-Free Lemon Filling:

In a medium saucepan, combine water, Besti powdered monk fruit allulose blend, and lemon zest, and bring to a boil over medium heat. Remove from heat and let cool slightly.

Add egg yolks very slowly while whisking constantly, and return saucepan to medium heat.

Simmer for 3-5 minutes, until filling starts to thicken. Remove from heat.

Add 1 teaspoon of butter at a time, waiting until melted before adding more. Whisk in lemon juice.

Sprinkle xanthan gum over the filling, then whisk immediately until dissolved.

Pour the filling into the pie crust.
Keto Meringue:

Using a hand or stand mixer, beat egg whites and cream of tartar, until stiff peaks form. Slowly fold in Besti Powdered, until uniform. (Do not stir to avoid breaking down the whites.)

Add the meringue to the top of the pie in small dollops. Smooth over the top, making swirls with the back of a spoon.

Bake for 20-25 minutes, until meringue is golden brown.

Allow pie to cool for 20 minutes then refrigerate for 4 hours before serving.
Recipe Notes
Serving size: 1 slice, or 1/12 entire pie
Prep and cook time does not include time to make the pie crust - you can use any pre-baked crust you like - we used this one.
