Sugar-Free Keto Banana Pudding Recipe
This low carb keto banana pudding recipes makes an impressive keto layer dessert! Sugar-free banana pudding features 3 irresistable layers, with just 4.4g net carbs.
Ingredients
Whipped Cream Layer:
- 4 cups Keto Whipped Cream (make 1.5x the recipe)
Keto Banana Pudding Layer:
- 2 cups Heavy cream (divided into 1/4 cup and 1 3/4 cup)
- 1 1/2 tsp Unflavored gelatin powder
- 1/3 cup Besti Powdered Monk Fruit Allulose Blend
- 1/4 tsp Sea salt
- 2 tsp Vanilla extract
- 3/4 tsp Banana extract
- 8 oz Cream cheese (softened)
- 1 cup Keto Sugar-Free Sweetened Condensed Milk
Shortbread Cookie Layer:
- 1 recipe Coconut Flour Shortbread Cookies (make 1.5x the recipe if you want extras for topping)
Instructions
Whipped Cream Layer:

Make the Keto Whipped Cream according to the instructions here. Refrigerate until needed.
Keto Banana Pudding Layer:

In a small bowl, sprinkle gelatin powder (sprinkle, don't dump) over 1/4 cup heavy cream and whisk together immediately. Set aside.

In a medium saucepan, combine 1 3/4 cups heavy cream, Besti, and sea salt. Heat over medium-low heat for about 5 minutes, stirring occasionally, until smooth and bubbling around the edges.

Remove from heat. Stir in vanilla extract and banana extract.

Add the gelatin mixture to the saucepan, and whisk until smooth and dissolved. Set the pudding aside to cool for about 10 minutes. Whisk mixture again to get rid of film on top and cover with plastic wrap, pushing the plastic wrap to down onto the top of the pudding mixture to prevent a film from forming. Refrigerate for at least 2 hours, until firm.

Meanwhile, make the sugar-free condensed milk recipe according to the instructions here. Set aside to cool.

In a large bowl, add cream cheese and beat with a hand mixer and beat until smooth. Add sweetened condensed milk and beat until combined.

Remove pudding from refrigerator, add to bowl with cream cheese mixture and beat for 4-5 minutes, scraping the sides as needed.

Using a spatula, fold in 1/2 cup of the Keto Whipped Cream.
Shortbread Cookie Layer:
Assembly:

Line a 9x13 inch baking dish with one layer of coconut flour shortbread cookies.

Using a spatula, spread the pudding mixture on top. Add the remainder of the whipped cream over the pudding layer, and spread.

Cover and refrigerate for at least 4 hours, or overnight.
